1 10 pound turkey breast
turkey rub:
| ½ C (packed) golden brown sugar | |
| ¼ C coarse salt | |
| 2 tsp onion powder | |
| 1 tsp garlic powder | |
| 1 tsp ground allspice | |
| 1 tsp ground cloves | |
| 1 tsp ground mace |
Mix spices for turkey rub. Rub mixture into turkey. Refrigerate uncovered 24 hours.
Prepare grill by arranging coals along sides with pan of water in the center.
Skewer onion quarters onto turkey and place turkey over pan of water. Pour a little bourbon into water.
Cover and grill slowly (4 hours?), basting occasionally with a mixture of water and butter.
